Rich & Charlie's Salad

Last night we ate too much cake, today I decided we better eat some salad.  I hope this is not how this will work while I compile and prepare recipes for the blog. :)

Born and raised in Missouri, I think this is just about one of the favorite salads there. It is good to serve year round.  I hope you enjoy it as much as we do.

Rich & Charlie's Salad

Here's what you'll need:










Combine dressing ingredients, set aside.
Chop the Romaine & Iceberg lettuce into salad bite size pieces. Slice red onion into thin slices, add to lettuces. Chop artichoke hearts, add to salad mix.










Toss salad ingredients together. Pour dressing ingredients over salad. Serve.











Rich & Charlie's Salad

Dressing:

1/2 cup grated parmesan cheese

1/2 cup salad oil          1/3 cup vinegar

salt & pepper to taste

Put all ingredients in jar, cover and shake well to mix. Can be made ahead of time and chilled in refrigerator.

Salad ingredients:

1 head romaine lettuce, chopped to salad size pieces

1/2 head iceberg lettuce, chopped to salad size pieces

1 10 oz. jar of artichoke hearts, drained & cut into fourths (opt)

1  4 oz. jar of chopped pimentos (opt)

1 large red onion, sliced thinly

Add all salad ingredients to a large bowl, mix. Add salad dressing just before serving. At this point you may add salt & pepper to taste, toss well.


I have made this salad adjusting the amounts of cheese to our taste, adding more if needed. I usually omit the pimentos, this is our preference. Lastly, I use just Romaine Lettuce most of the time.  For left-over salad, drain water from bottom of bowl, this accumulates as the salad sits, place in bowl, cover tightly with plastic wrap, refrigerate to enjoy next day.
